Banana Loaf
A much anticipated addition to my blog. 🙂 This is lower in fat than normal banana loaf recipes, and you can use a sugar substitute to reduce the calories further. If you cut the finished loaf into 15 equal slices, it comes in at less than 200 calories per slice. Yum!
Ingredients
50g unsalted butter
180g soft light brown sugar (or sugar substitute)
2 medium eggs, beaten
2 ripe bananas, mashed
200g self raising flour
1/2 teaspoon bicarb
Method
Preheat your oven to 180c and grease your loaf tin
Cream the butter and sugar together until light and fluffy
Add the egg to the mixture and mix
Add the mashed banana to the mixture and mix
Fold in the flour & bicarb
Pour into the prepared loaf tin and bake for 60-70 minutes until it’s lovely and golden on top
Allow to cool
Storage
This keeps really well for a couple of days in an airtight tin; keep it wrapped in some baking paper
Top tips
Why not add 50g chopped pecans and 50g of chocolate chips to this recipe? Stir them in after you’ve added the flour and bake as normal; the results are delicious.
